What We're Cooking: Super Bowl Sunday!

DEBORAH CROMBIE: We don't watch much football around our house, but I can usually jolly my hubby into watching the Super Bowl. I'm all in this year because a) It looks really cool on our TV, b) It is a cultural EVENT!, and c) An excuse to make something different for dinner.


But, I mean, really, how could we miss this year with the Chiefs playing the…oh, wait, who are the other team again? (Sorry, sorry, San Francisco fans!) Not to mention the whole other romance drama of the day… (Do I want to see if Taylor makes the game? Of course I do!)


And, Usher! And the Clydesdales. And the ads, although they were disappointing last year, I thought.


But back to the food and the something-different-for-dinner. I have some avocados that might be approaching ripe, so maybe some guacamole? And maybe nachos, that's always a thing, right? Meat or no meat? Hmmm. 


I'm not crazy about chicken wings, but I like the sauce, so I was thinking of trying Cauliflower Wings. But then I thought they'd probably be better done in an air fryer, which I don't have, so maybe not. Has anyone tried them in the oven?


Or maybe we will just have our usual Sunday night pizza and salad, and I'll use the whole Super Bowl thing as an excuse to buy a tub of Costco's Spinach Artichoke Dip, which will then live in the refrigerator for about a year, because it's HUGE. (Wonder if you can use it for pasta sauce?)

Now that's the way to do it!

Ideas, fellow REDs? Plans? A good but easy nacho recipe? Help!


HANK PHILLIPPI RYAN: This is such a fabulous discussion. Sometimes I make chili – – I don’t put beans in it, though, and Jonathan is always baffled. I adore chili, with shredded cheddar cheese, and  black olives and sour cream on top.
Or, nachos. (Nachos are just chili without the bowl, right?) Love them. 
But this year I will be on book tour  in a hotel in someplace like …Miami? I think, and Jonathan will be home. So I will be having hotel food, and Jonathan will be having one of the frozen things I left for him.


Have we decided who we are rooting for? 

DEBS: Chiefs for me, as one of my best pals lives in KC and is a big fan, so I like them, too. NOTHING to do with, you know, the Traylor thing... Okay, well, maybe a little... Hmm... Wonder who will be in the Kelce/Swift box??

JENN McKINLAY: I would love to help, Debs, but Hub is in charge of the food for the Super Bowl gathering at our house and for most of our meals. He does make a mean batch of chicken nachos. I will ask if he has a recipe. Now if we’re talking about what to bake for dessert, well, that I could help with. Apple pie? Brownies with ice cream and fudge sauce? Coconut cake? Maybe if I make the brownies look like footballs…hmm. 


LUCY BURDETTE: I am going to a friend's SB party, taking Melissa Clarke's buttery corn muffins with me to go with her chili. I assume there will also be some kind of salad and salty, creamy onion dip. I usually only make it through the halftime show and then go home to read:). This year our 7 year old granddaughter is desperate to watch because Taylor Swift might make an appearance. "She has to come!" we heard her say:).

RHYS BOWEN:  it’s just us this year. Usually we’re in Arizona and watch with Clare and Tim and have lots of good food. So whatever I fix has to be simple and quick. But guacamole is a good idea and I have a tarte d’Alsace in the freezer and we love edamame to nibble and I know we have Prosecco so all is well.

 

Oh, and super easy nachos. Buy a jar of chili con queso. Heat up. Pour over chips and cut up tomato and peppers and sliced olives.


HALLIE EPHRON: I bought about 4 pounds of chicken wings for my daughter to make buffalo wings. I will be sous chef-ing since I’ve never made a recipe for wings that I’d want to repeat, and *I* am the person who grabs off the wings on a roast chicken or turkey.


Nachos? That’s cheese and taco chips? Can I admit that I have never had them?


I will be tuning into the game for the final four minutes which usually take forty minutes, and is when the exciting stuff happens. By then the wings will be gone.


JULIA SPENCER-FLEMING: Honestly, I hadn’t planned on tuning in, ‘cause without the Pats, who cares? But I really really want to see how often T-Swift gets caught on camera! And see her hug her Kelce boyfriend - He’s so enormous! She looks so tiny! And I do love the ads.


Debs, Ross used to make the family bowl of nachos - chips, ground beef sauteed in taco seasoning, black beans and cheese. He would layer those ingredients in my large glass trifle bowl and put it in the oven on low heat just long enough to melt the cheese. Sour cream and guacamole on the side, because not all our kids loved them both. It’s a great dish because it’s hearty and the good stuff is all the way through, not just on top.

I also heard some suggestions while listening to Here and Now on NPR, and one of them - polenta pizza - sounds so good I’m going to give it a whirl!

    4. Joan, when we are invited to Super Bowl parties we never watch any of the game but the last couple minutes. Mostly the commercials, but it's usually too noisy even to watch those. I'd rather socialize.

    7. We are not football watchers either (though did watch a couple with the Pats back in the day - mainly to be able to converse with my football-obsessed nephew!). We enjoy SB Sundays to go out to dinner and have our pick of seats -ha! Today, however, we are traveling from Maine to Virginia and hoping the game is keeping everyone off the I95 for us to fly through the cities.

    10. Joan, I have never watched a football game in my life. The stories of CTE, even in young men in their twenties, are now so pervasive that I feel nothing but sadness when I consider the sport. Also hockey. Both are big in my town and it is hard to keep my mouth shut about parental choices. But I do.

  2. We will be watching this year for the football game (as opposed to the years where we watch only for the ads) because the 49ers are in it. I think 95% of the people in America are rooting for the Chiefs (and at least 50% of those because of the Taylor and Travis romance). We will have our annual carnitas “meal deal” from a local Mexican restaurant. Rhys, I hope you’re rooting for the 49ers since you live so close. — Pat S

  3. I'll be tuning in for the commercials. I also pay attention to the last period especially if the scores are close, otherwise I'll be switching channels for something good. No food planned as I'll be getting off a plane and arrive home sometime after the first quarter.

  4. I haven't decided yet if I am going to watch. I heard Reba was doing the SB and thought that meant the half time show and I was so excited but she is still performing the pregame singing The National Anthem. I usually watch for the ads but I was also disappointed by the ones last year. My brother is a big 49's fan so there may be some texting back and forth depending on how they do. Me I miss Joe Montana. LOL

    Can you tell we watch football in this house?

    As for food, Julie requested lasagna and a salad this year, with a lot of anti pasta nibbles plus the requisite guac and Tostitos. We have a friend joining us but doubt she’ll last much past half time. The lasagna I put together yesterday so all I have to do is put it in the oven. Julie is responsible for all the rest

  8. Since we're always in bed by 8:00 thanks to early-rising Hubby (wondering if I can retrain my sleep cycle when he retires this summer), we won't be watching the game. I'll catch the highlights tomorrow, especially the glimpses of Taylor. Love her.

    Debs, I think Spinach Artichoke Dip over pasta sounds amazing! I've also used it to top salmon when baking it. Pretty tasty.

  13. I am an Iowa State alum so I want to see Brock Purdy do well for the 49ers, but I grew up in KC and still have friends there who love the Chiefs. The deciding factor? Our niece, who has ALS, is a huge Chiefs fan and she was awarded a trip for 3 to the game by Team Gleason. I want her to see a win! https://teamgleason.org/steve-story/

    Recipe: Put one can of Campell’s Fiesta Nacho Cheese Soup, one can of Campbell’s cheddar cheese soup, one can of Rotel tomatoes in crockpot. Add a pound of browned ground meat (I use lean hamburger, you could use sausage or turkey) You can sub Velveeta Cheese for the soups.
    Serve the chips on the side to dip..

  14. I'm not sure about the SB. I usually watch, sometimes with family, but we have no plans this year. I do like sports, but American football is kind of at the bottom of my list (real football aka soccer and baseball at the top). That said, I would definitely be rooting for the 49-ers if I do tune in. Go west coast!

    Food, hmmm. If I make dinner tonight, it will be chicken thighs and acorn squash--not very traditional game day food. I love homemade guacamole, so it might be worth a stop at the store for tortilla chips and avocados.

    I did think ahead enough to get cash (which I don't usually carry) for our church's Souper Bowl of caring fundraiser for the NE Emergency Food Program. The kids stand at the doors with big soup pots to collect money, I can't just walk by.

    Our daughter and 2 grandkids are coming over so we've ordered our favorite pizza (the local company prepares it and we bring it home to bake - it's the best!), wings from a place my grandson loves, sushi (who doesn't like sushi), and dip and chips, maybe make cupcakes with my granddaughter who won't watch the game but loves to cook! Very odd assortment I know.

    Who am I rooting for? Taylor Swift.

  16. I have no interest in football, Taylor Swift, and in Canada the ads sometimes are substituted, BUT I do love food, and particularly hot wings. I also do prefer if someone cooks them, but, the freezer could cough up some little drumsticks, so they may make the menu. Frank’s Hot Sauce is a regular on most things, but there is no blue cheese (I wonder if I can substitute a British cheddar to make the cooling sauce). Now to deep fry (it means there can be French fries as well) or oven, and just a salad. Oh, the decisions…
    However, I would also love to go to Joan’s for the roast beef.
    As for what we will watch – All Creatures Great & Small comes to mind.

    3. Two more here for Masterpiece Theater tonight including All Creatures Great & Small! If all sports ended tomorrow, my husband would not notice. Yet, he does like food and this is a great day for something interesting. He is in charge of the chicken thighs. No wings for us as they have way too much fat! My job will be to pop some shrimp bundles in the oven that I ordered online for the holidays. Given that we are expecting a ton of snow here in the Boston area on Tuesday, I might just make a double batch of tapioca. I love to top it with sliced peaches!

    Margo, I think it's the ranch dressing that makes the cooling part for the wings.

    Neither of us are very invested in the Super Bowl. Some friends usually invite us over, and no one's said anything this year, but the wife will be part of a ladies' lunch this afternoon and she will probably ask if we want to come. If we go I'll be turned away from the TV, yakking and snacking. A) I'm not much interested in the game, especially since it's not the Bengals, who the Chiefs walloped in last year's contest. B) My eye surgery is not for two more weeks, so I am not able to see half of the action, anyway. C) that goes double for the commercials, which I'll also not be able to hear. D) it will all be online tomorrow, anyway.

    Debs, that charcuterie tray looks fabulous! A friend's daughter has a business making them, with her wine/cheese/fancy food and kitchen accessories shop, and they are PRICEY. They set the bar really high for entertaining these days, compared to the unimaginative little cheese and crackers trays we used to serve.

  18. I spelled it wrong: pataniscas are fritters with salted cod, mixed with flour, eggs, (and some put mashed potatoes, but not everyone), and simple herbs, like parsley. For such a basic dish, you wouldn't believe how delicious they are. We are absolutely hooked on them.

  19. Oops, I forgot to mention minced onions. And since it's salted cod, you have to soak it for two days, changing the water every so often. Needless to say, we don't try to make it, we go out for it. 🤩

  20. Everyone's recipes above sound wonderful.

    Guacamole and nachos sound delicious! My simple recipe is fresh veggies cut to bite size with different dips. Sometimes nachos and guacamole. Sometimes grilled cheese finger sandwiches with cups of tomato soups if the weather is chilly.

    Curious to see if THIS YEAR ??? Will they finally show the Deaf Signers signing the National Anthem during Half time? If any of you are watching Super Bowl, then please let us know.

  21. No Super Bowl for me or my husband, although I'm sure some Swiss must watch it. The main sports we watch are soccer and skiing. I'm making a nice meal for tonight, however, because our son is coming to dinner. He'll get pork roast braised in a dark beer and vegetable sauce with oven-roasted potatoes and broccoli, salad, and homemade chocolate pudding with whipped cream for dessert.

  22. Like Julia, I'm of the school of thought that if the Pats aren't there, who cares? To be honest, despite my love of sports, I just don't care who wins the Taylor Bowl.

    While I will be interested to know who wins, I can do other things for four hours and just check the final score online. But I have no emotional stake in either team winning the game.

    Food? Well, I'm not invited to any parties (thankfully), so I'm not doing anything special for dinner. Hell, I'm so lazy about dinner plans that if I can work up the ambition, I might just make eggs and toast and be done with it.

    I'm an actual football fan so the abomination that is the Super Bowl Halftime Show means I shut the TV off for 20 minutes or so to avoid that garbage.

    The Ads? I thought I heard something that the cost this year is $7 million dollars for a spot. And yet all the damn things are already online? What's the point of watching the TV for the ads (also an abomination) when you can just do a Youtube search.

    I'm not a little girl who thinks Taylor Swift is code for god so I don't care if she is at the game or not and I'm not placing a bet on how many times she gets shown on TV. Now, despite that I'm not a fan of her music, don't think I hate her. I mean, how can you not like someone who makes $13 million dollars for every show she does.

    So Super Bowl Sunday is just another day here for me. Wake up, clean up, housework, computer, read, watch TV, have something to eat, fall asleep on the couch, wake up at 2am and go to bed until 6am Monday.

  23. Growing up in Sonoma County, north Bay Area, so it's Niners all the way! I have my corn chips, salsa, cheese. Leftover fried chicken and a small loaf of sourdough bread, it's a nibble afternoon for me. Let's go Niners!

    2. My husband and I were able to purchase tickets for a Taylor Swift performance at Gillette Stadium 14 years ago (June, 2010). It was a great show. It was so sweet to see all of the mothers and daughters AND to experience them singing along with Taylor! I really enjoy music where I can hear and understand the words, especially if there is a chorus alternated with verses! Real Music!

  26. The Browns didn't make it, so who cares? :-) Not that I would watch anyway, but I'd at least check the score periodically. Searching right now for a lost recipe--a penne pasta salad with chicken, marinated artichoke hearts, olives, cherry or grape tomatoes, spinach, capers, red onion, feta, and a balsamic dressing. I can't remember how to make the dressing, or seasonings. So it may end up being nachos with queso chips for supper tonight.

  27. Hallie, I'm 75 with 5 grown kids, so there's not much that will shock me! BUT, you've never had nachos? That's my quick microwave go-to: tortilla chips on a paper plate, top with grated yellow cheese, in the microwave for 30 seconds. Eat with my ever present homemade salsa or a can of Rotel, quickly whizzed in the Cuisinart. (If I have time, I spread canned refried beans on the tortilla chips before sprinkling the cheese.) Now, I understand why Nora didn't include a recipe for nachos in her book Heartburn. (I haven't signed in, but I'm Linda Jacks, a fan of all of you.)

    1. As a Texas, we just assume that everyone in the country eats nachos! But nachos are also pretty flexible--maybe the only fixed thing is the tortilla chips? You can layer with beans, or beef (steak or ground), chicken, just cheese, or any combination of the above. Oh, and salsa!

  29. Edith, you may have had bolinhos de bacalhau, which are different, smaller, but use similar ingredients. We're hooked on those, too! They are very popular in Brazil.

  30. I was having a thought about the typical Super Bowl party spread - I think football-watching food is America's version of Spanish tapas, Chinese dim sum and Greek/Middle Eastern mezze. Just the Super Bowl party, too - tailgate meals tend to have more substantial dishes like chili and burgers. The nachos and wings and quac and bowls of salted snacks? That's our country's little dish tradition!

  33. Most years I'm rather lukewarm about the Super Bowl, but this year . Oh wait, it's showing Patrick Mahomes walking through to their dressing room. Yes, I'm a bit excited this year, and I have been watching the Chiefs play leading up to this big day. I'd like to say I'm for the Chiefs because my husband was stationed at Ft. Leavenworth and went to some Chiefs games, but I will admit that Taylor Swift and Travis Kelce were the ones who got me glued to the TV today. But I also enjoy Mahomes and Isiah Pacheco (I love his story how he stayed loyal to playing at Rutgers).

    A note of interest is that 49ers fullback Kyle Juszczyko's wife made Taylor Swift's Chiefs jacket. Brittany Mahomes was also wearing one. Of course, Taylor Swift wearing a puffer jacket made by Kyle Juszczyko can't have hurt Kyle's designing business (probably hard to tell how much in money that will mean). She does other NFL team wear and supposedly has a deal with the NFL.     Food. I have chips and salsa, buying Pace salsa after reading a review of the top salsa brands. From one of my favorite farm store deli, I've got quesadillas. And, I bought some bacon bourbon barbecue sauce to fix some little smokies on the stove. I had Philip pick up a small vegetable tray at Kroger's. Oh, and I got about a quart of white chicken chili at the farm store, too. And, I have a couple of back-up frozen pizzas. Philip and I will be the only ones here, so there will be plenty.

  34. I'm a party of one tonight with no dog in that fight, so I'll read or find something entertaining to watch on TV. I'm leaning towards KC since Dad was born there long ago. I used to be a big Browns fan when we lived in Ohio in the 80s and 90s but my love of pro football went down the drain when Art took the Browns to Baltimore. But I am a huge college football fan, so talk to me next fall!

  36. Lifelong Niner fan here. Born in San Francisco, and when I was a toddler we
    lived in a housing project called Candlestick Cove on the site where Candlestick Park would eventually be built. Had my first Season Tickets in the 70s, but lost custody of them in my divorce. I'm excited for my team and our amazing quarterback, Brock Purdy.

    On the menu today are BBQ ribs, potato salad, and green salad; simple but yummy. ~Lynda
