JULIA SPENCER-FLEMING: Our dear Celia Wakefield is taking a well deserved rest, so I thought I'd share some of her best summer recipes, for you to revisit or to discover for the first time. Why Friday instead of her usual Sunday? Because it's the start of Labor Day weekend, and chances are good you'll either be entertaining or taking a dish to someone else's dinner/ cookout/ pot luck.
And if you're not part of a crowd? We've got you covered - you can relax, kick your feet up, and enjoy the last lazy days of summer with a Pimms Cup.
First up, a simple summer meal of marinated shrimp, green salad and a deconstructed strawberry shortcake, featuring shortbread cookies, strawberries, and - yum! - Grand Marnier.
Not feeling like shellfish? Need a dish that will travel well? Not to worry, you'll be happy with the alliterative Fresh Pea Pesto for Pasta and a Fourth of July mess for pudding (or call it Red-White and Blue dessert.)
If you're overloaded with gorgeous fresh tomatoes, first of all, congratulations, and secondly, the cool and easy Tomato Tonnato is made for you.
Since the tonnato doesn't come pre-loaded with a dessert, why not try some British Summer Pudding, bursting with fruits and berries.
And as promised, the perfect Pimms. If you make one, please raise you glass and toast the founder of all this summery goodness, our own Celia!

comments). It should be 1/4 cup of mayo (not 1 cup)!

DeleteMmm. These all sound good. Thank you for the suggestions, including the shrimp dish. We are pescadarians I suppose, since we do eat fish and seafood. Being in Portugal, we don't have Labor Day weekend plans, but we have something else to celebrate: Rajan's renewed passport came today - good for another ten years. So it's Champagne tonight. 🙂

DeleteMy hub just got his Canadian citizenship and Canadian passport so now he is a duel citizen.
But we will continue to live here in Calif for our grandkids. Otherwise, we'd probably we overseas!

ReplyDeleteI agree with Celia about the diet drinks in a Pimm's Cup, and I recommend a good tonic like Fever Tree, or just plain club soda.
It's cool (ish) here in north Texas this weekend, so we are celebrating that first hint of autumn. Wishing you a wonderful wedding weekend, Julia!
I look at all of those delicious food choices and sigh. I am having major stomach problems right now, nothing that hasn't plagued me before, so I have to be very easy on my tummy right now, but I think I'd really love that shrimp and berry pudding. Also, when Bouchercon was in New Orleans in 2016, I got a group of authors and readers together to eat at Napoleon House, famous for its Pimm's cocktail, with a glass you can buy (unused) to keep. I was determined to have a Pimm's. I did like it and would have it again, but it was just the ambience I wanted more than anything.

ReplyDeleteWanted to say I made Celia's shrimp dish. I did add 1/4 tsp of red chili flakes because I thought it needed a bit more spice. I also served it with jasmine rice and the sauce. It was very good and I recommend it.
