Lemon Poundcake Shenanigans

 JENN McKINLAY: Social media can sure feel like a giant cesspool, but every now and then a little gem comes along that entertains me and reminds me that there are some seriously funny people out there. So, last week as I was harvesting lemons and trying to figure out what to do with them, I came across a dude called Afroman and his song about a deputy who was searching his house and paused to eyeball his mama's lemon poundcake. Naturally, Afroman wrote a song about it.



Now, the stars (read Sheriffs) who were featured in Afroman's video which was posted three years ago, took offense to the video and sued Afroman for defamation. This was where it came across my radar because the court case was bonkers! You can Google the case to find out what happened as there will be no spoilers here! But I will say Sheriff Poundcake's ex-wife was Afroman's lone witness. 

In any event, the whole thing gave me a hankering for lemon poundcake, so I made one! 


Here's the recipe, inspired by Seasons & Suppers but tweaked a bit:

Loaf:

  • 1/2 cup butter, room temperature

    3/4 cup white sugar

    3 large eggs, room temperature

    2 Tbsp lemon zest,1 large lemon

    1 Tbsp lemon juice

    2 tsp vanilla

    1 1/2 cups all-purpose flour

    1/4 tsp table salt

    1/4 tsp baking soda

    1/4 tsp baking powder

    1/3 cup Greek yogurt

    Glaze:

    1 cup icing/confectioners' sugar
    2 Tbsp lemon juice or whatever amount achieves desired consistency

  • Instructions:

    1. Preheat oven to 325 F. Grease an 8x4-inch loaf pan.

    2. In a large bowl with an electric mixer, cream the butter with the sugar at medium speed until light colored and fluffy. Add the eggs one at a time and beat in well after each addition, scraping down the sides of the bowl, as needed. Beat in the lemon zest, lemon juice and vanilla.

    3. In a separate bowl, whisk together the flour, salt, baking soda and baking powder. With mixer on low, add the flour mixture to the butter mixture alternately with the Greek yogurt.

    4. Scrape into prepared 8x4-inch loaf pan and level batter. Bake in preheated oven for 50-55 minutes, or until a tester inserted in the center comes out clean.

    5. Allow to cool in the pan for 15 minutes, then run a knife along the edges to loosen and remove from pan. Allow to cool on a cooling rack.

    6.  While loaf is still a little warm, prepare the glaze in a small bowl, adding enough lemon juice to make a pourable glaze. Drizzle on top, allowing it to drip down the sides a bit. Cool completely, then slice and enjoy.

  3. I heard of the case, reading news headlines, but hadn't looked into it. It does sound ... bizarre. Your lemon poundcake, however, sounds delicious! I have all the ingredients here at home except the Greek yogurt. I am going to see if I can sub in sour cream. Thanks, Jenn! (Selden)

    p.s. Speaking of news, this morning I read about a 20-year-old "looksmaxxing" star -- into steroids and cheekbone smashing with hammers -- who walked off Sixty Minutes Australia after being asked if he was an incel! I had half-thought Julia was joking with her "maxxing" post!

    3. "Involuntary celibate," i.e. ignored by girls. Somehow they think the answer is to take different meds, even meth, and hit themselves with hammers, rather than develop kindness and a sense of humor. Sadly, the whole vibe is hatred of women. In my safe little rural bubble I had no idea of the number of damaged young men there are in the world until the recent election freed them from their mothers' basements! :(

  4. I was previously unfamiliar with the case, but I did go look it up just now. Wow! Your lemon poundcake recipe looks great. I don't bake often, but I'm definitely holding onto this one for the next time I do need to supply a dessert

  6. I saw lots of mentions of the case on Bluesky, but didn’t follow-up. A few weeks ago we went to Menton, the lemon capital of the Riviera. We brought back some limoncello, but this pound cake would be a hit there.

  8. Saw the headlines, haven't seen the video. After my eye appointment this morning, I'll listen to the song while my eyes go back to normal. :-) Also, the lemon cake looks delicious--I love lemon and blueberries, as Margaret says, but I'm thinking I need some fresh raspberries to go with mine.

    This is hilarious! And now I am singing this song, thanks so much, Jenn. The court case is fascinating, isn’t it? Such a lot of interesting legal precedence, and I agree. And now I am singing. The raspberries/blueberry debate is a pressing one, too!

  14. Jenn, what Joan said. Though I love lemon pound cake, I am allergic to dairy and gluten at this writing. I can adjust the recipe to dairy free and gluten free.

  16. The police filed a defamation case against Afroman. What surprises me is that the police weren't exposed in the court proceedings to all sorts of illegal actions.

  17. I had not heard about this case, so I watched the video and then looked up the case. I don’t know how people were able to keep a straight face in court!

    I would love to make that cake, but I’m afraid I would be tempted to eat the whole thing myself.🙄

  18. I will look up the Afroman song and the case, I am intrigued now. I have to add that lemon poundcake, or any poundcake, is good for breakfast! A plain poundcake toasted is something special and of course a lemon poundcake with a glaze is very much like a coffee cake, right? (Barbara C.)

  19. Jenn, thanks to you--and Afroman--for making me smile this morning. I looked up the case and I say hooray for Afroman! As for the lemon poundcake, I'm thinking even non-baking me could make it. And I would serve with blueberries.
    P.S. My local bakery makes little lemon olive oil cakes. I get one every few weeks so that I can have a tiny slice with my afternoon tea.

  20. Yum, Jenn! Your lemon poundcake looks so delicious that it actually might get me to bake one this weekend. Although, I'm like you in that I don't mind baking. It's cooking meals that I've also handed over to my husband. So, baking doesn't seem like quite the chore other cooking does. I baked my chocolate cherry cake for Easter. And, that video of Afroman was hilarious. I now have to look up the court case.

  22. Afroman lives about 45 minutes from here, so yeah, it was all over the local news. A musician friend knows him, too. The deputies taking him to court were ridiculous, but that county is 99.9% white, so not surprising.
